Desi ghee is also known as “homemade clarified butter” in English. Ghee is made by simmering butter and removing the milk solids, leaving behind the pure butterfat. Ghee is rich in healthy fats and vitamins

Some benefits of ghee include: 

  • Nutrients: Ghee is a rich source of vitamins A, D, E, and K.
  • Digestion: Ghee helps maintain good gut health.
  • Lubricates the body: Ghee nourishes and lubricates tissues in the body.
  • Reduces inflammation: Ghee effectively deals with various anomalies caused due to pitta dosha such as inflammation.

Ghee has a higher smoke point than butter. Ghee smokes at approximately 250 degrees Celsius while butter smokes at approximately 175 degrees Celsius. 

Ghee is a key ingredient in most Indian, Pakistani, and Middle Eastern cuisines, religious and traditional rituals, and traditional medicines

Desi ghee is made from pure cow’s milk. The traditional method involves: 

  1. Fermenting raw or heated milk with lactic acid
  2. Churning the curd into butter
  3. Heating the butter to make ghee

The Desi method can also involve separating clotted cream (malai) from boiled milk and churning it into butter. 

Here are some steps for making ghee: 

  1. Put butter in a heavy-bottomed pan
  2. Melt the butter over medium-low heat
  3. Skim off the whey when it floats to the top
  4. Simmer until the milk fat sinks to the bottom and the butter turns clear
  5. Simmer until the milk fats brown and become fragrant
  6. Strain the caramelized milk fats using a fine sieve, muslin cloth, or tea strainer
  7. Store the ghee in a clean, airtight jar

Ghee has many benefits for the skin, including:

Ghee is a natural moisturizer that can provide long-lasting hydration. It contains vitamin A, fatty acids, and phospholipids.

Ghee can improve skin tone and elasticity. It can also reduce the appearance of fine lines and wrinkles.
